Olfactory analysis
On the nose it is medium fruity with herbaceous notes and hints of green apple. On tasting it is a delicate oil. The taste is sweet and almondy, with a light spicy note and a delicate bitter note harmoniously balanced.

Olive variety
Carpellese, Oil mill
The production is obtained almost exclusively by pressing olives of the ‘Carpellese’ variety, an ecotype cultivated in the area since ancient times, and a small percentage of the ‘Frantoio’ variety.
Type of extraction
Cold extraction takes place at temperatures below 27°C in order to preserve the typical organoleptic characteristics of extra virgin olive oil. The resulting oil ranges in colour from green to a more or less intense straw yellow.

The herbaceous notes of this oil go perfectly with bruschetta, tomato salads, cereal soups and roast fish.
