From a strictly pedological point of view, the soils of the Agro Sarnese-Nocerino are very deep, soft, with a good supply of organic substance and a high quantity of assimilable phosphorus and exchangeable potassium.

The hydrology of the area is very rich due to the presence of numerous springs and abundant water tables at different depths. Water for irrigation use is generally derived from wells that feed directly from the water table.

In terms of climate, the Agro Sarnese-Nocerino feels the beneficial influence of the sea. Temperature excursions are not significant.

In fact, San Marzano has excellent organoleptic properties: it contains glutamic acid, which is used in cooking as a flavour enhancer.
