The superior category extra virgin olive oil is obtained from a unique selection of olives grown in the area of Buccino, a small village situated in the hills on the border between Campania and Basilicata.
The production is obtained almost exclusively by pressing olives of the ‘Carpellese’ variety, an ecotype cultivated in the area since ancient times, and a small percentage of the ‘Frantoio’ variety. This variety of extra virgin olive oil is characterised by processing the olives by crushing the kernel.
The olives are harvested with the help of automated means (shakers and combs) and immediately pressed in an on-site mill using the best oil technology on the market.
Cold extraction takes place at temperatures below 27°C in order to preserve the typical organoleptic characteristics of extra virgin olive oil. The resulting oil ranges in colour from green to a more or less intense straw yellow.
On the nose it is medium fruity with herbaceous notes and hints of green apple. On tasting it is a delicate oil. The taste is sweet and almondy, with a light spicy note and a delicate bitter note harmoniously balanced.
