The singular name is derived from the particular elongated shape and colour. The dente di morto bean is a cannellini bean with a mellow flavour and very thin skin. The characteristics of the Campania soil in which it is grown make it irreproducible elsewhere: the genotype, the volcanic nature of the soil, the climate, plus the cultural element, all combine to give it its uniqueness.
Sowing is done entirely by hand. Harvesting is followed by shelling and sorting by hand, drying in the sun and packaging.
Every step is still carried out as in the past, with the tenacity of someone who has a deep connection with the land and respects its timing and fruits.
